Burned wrists and dropped casseroles are the two most common kitchen injuries involving hot cookware. A good oven mitt stops both. A bad one either transfers heat through the fabric or makes your hands clumsy enough to drop things. We tested six kitchen heat-protection products — silicone mitts, traditional quilted cotton, glove-style oven mitts, pot holders, and trivets — to find which ones actually protect your hands. Each product had to hold a 425°F sheet pan for 30 seconds, grip a cast iron skillet handle, pick up a glass baking dish, and set hot cookware down on trivets. The results were surprising. ...
